cup confectioners' sugar

teaspoon salt

1 cups finely ground almonds

4 teaspoons vanilla bean paste

3 cups of sifted all purpose flour

1/3 cup confectioners sugar for dipping

First, preheat your oven to 325 degrees if you have an electric oven and about 300 to 315 if you have a gas oven. Gas ovens cook much faster than an electric oven depending on the oven. If you have a convection oven I recomend turning the fan off if you can, it will burn the cookies before they are fully cooked.

First you will soften and mix the butter in a bowl, and you will sift and then add the cup confectioners sugar and salt to the butter. You will then mix the butter, and sugar with salt mixture until it is light and fluffy. You will now add the ground almonds and the vanilla bean paste. You will then add the sifted flour in until it just mixed, you do not want to overmix, or overwork the dough. The cookies will not be very light in texture if you do.

Take about one teaspoon of dough in your hand at a time, and roll it into a ball. You will then place the rolled cookie dough balls on the parchment paper or an ungreased cookie sheet if you do not have parchment paper. You will then bake the cookies for 15-20 minutes. You will want to watch the first batch fairly closely and turn halfway through baking to ensure even cooking. You want to make sure to get them cooked but not too brown. Once the cookies are done you will remove from the oven, and cool the cookies for about five minutes, and then roll in the left over confectioners sugar.

You will then hold these little delicate cookies until you are ready for service.

      The cheapest place to find these would definitely be at a grocery store. Contact a local grocery store near your wedding destination. Most grocery stores will do custom orders for a very cheap price. I know that I, personally, had 4 dozen Christmas cookies made for a family Christmas party. They were about /dozen from a local grocery store. They were snowflake shaped sugar cookies with blue icing. Obviously, they had other styles, and they did custom orders. Call them up.     My half sister used to make us these cookies for christmas, they were either russian tea cookies or mexican wedding cookies, they were bout 1-2 ich round dome shape with pecans or walnuts in a crumbley cookie and coated in powdered sugar, they were melt in your mouth, they were NOT spicy like German christmas cookies, they probably had a good amount of vanilla in them.       2 cups pecans, chopped
      1/2 cup sugar
      powdered sugar, for rolling

      Cream butter and sugar, add remaining ingredients, except for powdered sugar.
      Roll into balls, small, about a"quarter" in diameter.
      Bake for 5 minutes on 275F, then 20 minutes at 350F degrees.
      Roll in powdered sugar while still hot, we usually do 2-3 coatings of sugar.

      unless you are premaking the cookies and freezing them i would not make them any earlier than ONE week from the wedding day, but if you are preparing these your self, id make the cookies and freeze them and then decorate 2-3 days before wedding and bag at that point.

      8 ounces almond paste
      1 1/2 cups butter
      1 cup white sugar
      4 eggs
      1 teaspoon almond extract

      depends on the flour and shortening used.some call for all purpose flour which you have to add salt and baking powder or you can use self rising flour. it has all the ingredients in it. shortening is used or unsalted butter. Try this recipe.1 c butter,1 c powdered sugar,1/2 t vanilla, 1 3/4 flour,1/2 c nuts.chopped fine. cream butter & sugar,work in vanilla,flour,nuts. shape into a long log. 1 1/2 in. diameter. fridge until chilled..slice about 1/4 to 1/3 thick.bake ungreased cookie sheet. for 20 min. at 350o when cool dust with powdered sugar.     I was recently at a wedding reception, and they served the most delicious cookies I've ever eaten. They were tiny sandwich cookies, probably about a half an inch wide. The sandwich part were square cookies, they were flaky and very "melt in your mouth". Then in the middle it was like a buttercream frosting. The cookie part also had little designs on them.       1.A few hours before making the cookies, make the brown butter. Melt the butter in a medium saucepan over medium heat.       I asked the same question a week ago and received an answer from Dottie R. I made her recipe and did not give her a very good review. Since these are not my favorite type of cookie, I asked my mother and she said they were exactly right. My husband really liked them. Sorry, Dottie R, for the bad rap. Did steal one ingredient from Miss Mary. Add 1/4 teaspoon of cinnamon and if the dough is refrigerated overnight, let it sit a little bit before making the cookies. It can get really hard.

      Mexican Wedding Cakes (6 doz)

      Here's our family's recipe. My mother or her mother started making this recipe at least back in the 1950s. They're delicious. I make the dough one day and then bake them the next so the dough is thoroughly chilled. But you could make the dough in the morning and bake them a few hours later.

      1 cup softened butter
      ½ cup granulated sugar
      ½ tsp salt
      1 tsp almond extract or 2 t vanilla (used vanilla)
      2 cup sifted all-purpose flour
      1-2 cups ground nuts
      cream sugar and butter
      add dry ingredients, mix well
      chill dough until easy to handle

      Sugar cookies would be the best. They are really flat. You can use sugar colored to match your wedding colors and decor and dip your finger in some water, draw a "C" on the top of the cookie and sprinkle sugar on top. Gently shake off excess, and the sugar will only stick to the water. For a sweeter taste, you can dip your finger in corn syrup, too, instead of water.
